G9 Insider: 1300 on Fillmore

January 4, 2013

In preparation for 1300 on Fillmore‘s 5th Anniversary, we were commissioned to photograph their new menu items and updated portraits.

A few weeks ago, we introduced you to David Lawrence, 1300 on Fillmore’s Executive Chef, but we didn’t really scratch the surface.  Spending an afternoon with Chef Lawrence in the kitchen left us in awe of his skill and talent.   When he cooked his fried chicken, for example, there were no thermometers and timers — using just a pair of kitchen tongs, he knew the doneness by weight, color, and softness.

He talked with us about his creative process in transforming and combining classic dishes and flavors with down-home styles and ingredients, and at the same time holding a high standard for technique and execution to create consistently delicious food that keeps diners coming back for more.

When it came time to photograph the dishes, our shooting style and the food styling began to mesh with the Chef’s vision.  Each dish took center stage, and there was no need to dress up the table setting or use props to create a faux dining experience for context.  While we had our usual toolset of tweezers, scissors, utensils and brushes to adjust all the fine details, we rarely used them as the food came from the kitchen already plated with a wholesome beauty.

We also had the honor of shooting the event photography for 1300 on Fillmore’s 5th Anniversary.

The size and energy of the crowd should have been a clue, but throughout the night we couldn’t help but get more and more excited  as we learned about 1300 on Fillmore’s years of contributions to the local community through Monetta White and David Lawrence’s outreach and passion for helping others.

The night was filled with warm smiles and heartfelt hugs as community leaders, friends, co-workers past and present, and political figures celebrated together.  More than just a restaurant, 1300 on Fillmore is a neighborhood hub and community center.
